One of the joys of going to Disney without kids is taking your time to enjoy all that Epcot has to offer. There are attractions that are fun but it can be just as enjoyable to visit each country and take your time to walk around and look through the shops and see the street performers. You can even try to get a meal or snack in every country. Four countries have attractions that are movies and two have boat rides. If you want to get a sense of the country then you can view the movie. Some find it interesting and others may find it boring.

You will find Epcot to be more of a relaxed day than Magic Kingdom with lots of rides. There will be lots of walk though.
